This variation of the Spanish gazpacho is the perfect match for a hot day! It is tasty and refreshing as well as filling without leaving your stomach with a heavy feeling. And you do not have to heat no stove 😉
Especially for pregnant women it is a great choice as it doesn’t put pressure on your stomache.
If you prepare the gazpacho for kids you might want to skip the onion out and use half the garlic as otherwise the dish might turn out too spicy.
Ingredients for 500ml:
10 tomatoes
2 cloves of garlic
1/2 red onion
1 bunch of parsley
1/2 bunch of cilantro
5 table spoons of olive oil
salt
Preparation:
wash and drain all veggies and herbs. Dice the tomatoes and cut the onion and the garlic in small cubes. Remove the leaves from the herbs and mix everything together with the olive oil and a pinch of salt.
Use a food processor or blender to create your creamy, rich gazpacho!
Stop: Due to the raw garlic you might not want to enjoy this dish before an important date or a visit to your dentist 🙂
Tip: If you really want this melting-like consistence of your soup, you can put the tomatoes in hot water for one minute and remove the skin before processing it further.
