ca. 500g veggies per person
500g green asparagus
250g red onions
or other veggies of the season (pumpkin, parsnip, zucchini, sweet potato…)
salt, pepper, other spices of your choice, e.g. rosemary
to pimp the dish
1 package of natural tofu
100g cashews or other nuts
Preheat oven to 180°C.
Wash the veggies and peel if needed, cut into pieces and put everything into an oven dish which is prepared with baking paper.
Add some tofu or nuts if wanted, sprinkle with olive oil and season according to taste. Quickly stir the mix and bake it in the oven for about 30 minutes. Turn veggies over carefully after about 20 minutes fto ensure a consistent baking process.
These oven veggies are really sooo tasty, totally variable and literally preparing itself while you enjoy the summer or whatever 🙂
Combine it with salad or grains such as boiled millet or else and create a wonderful family dish pleasing big and small people with different tastes and appetites.
TIP: Olive oil with its distinctive aroma is the perfect match for these mediterranean oven veggies. Containing monounsaturated fatty acids you may heat it up to 180°C without taking the risk of creating damaging trans fatty acids.
