Croquettes with cucumber salad

Recently i watched one of these recipe-videos on facebook. Unfortunately i do not remember the author but the recipe sticks to my head ever since. So i finally made it myself today. And i have to say: thumbs up!

These potato and zucchini croquettes make an easy lunch which your kids and you are gonna love. It is healthy, tasty and easy to do. What more do you want?

A special highlight for me is always the „fudge factor“ (can one say that?) meaning the chance to hide and fit in as many unpopular veggies as you want 🙂 Nobody is gonna recognize that afterwards.
By the way, these croquettes are supereasy fingerfood which small (and sometimes big) kids looove!

Ingredients
for 1 adult and 2 small Kids / 1 big Kid

10 middle-sized potatoes
2 small Zucchini (or carrots, pumpkin…veggies of your choice)

1 Cucumber
2 TBSP vegan Mayonnaise
Juice of ½ Lime
1 bunch of dill

Salt, pepper
Coconut oil for frying

Prep time: ca 45 Minutes

The croquettes-cakes

Clean and boil the potatoes fork tender and peel. Grate potatoes and zucchini coarsely and mix together. Add salt and pepper to your taste.
Heat the coconut oil in a pan and form croquettes-size cakes in your hand. Fry these from all sides and enjoy 🙂

Cucumber salad

Wash the cucumber and slice it thinly. Stir the mayonnaise together with the lime juice and pour it over the cucumber. Mix in the dill, salt and pepper. That’s it!

Serving suggestion:
This meal is easy on the stomach and yet filling. Perfect on warm summer days for picknicks, bbq’s or a party no matter what age group.

It also works well as a take-away to the kindergarden or office for lunch and stays fresh to get eaten the next day. Any more wishes?
